A Delightful And Healthy Recipe

Akki Roti is a flatbread made with rice flour, spices, herbs and vegetables. Akki Roti translates to Rice Roti which are gluten free as well. When it combines with the Avocado it becomes healthiest option to eat.

The sole inspiration of the dish came from exploring Hyderabadi cuisine where Akki roti is made in every home and from exploring Kannadiga cuisine which represents both regional and coastal delicacies. Being a fast IT City, Bangalore’s crowd forage for handy foods which can be consumed on the Go. Hence coming up with a dish with some local influence and satisfying the people’s choice simultaneously.

People have evolved their food patterns to a much healthier perspective. Even though the trend has changed the search for the taste, texture and visual appeal is still intact. In this era of “mock meats”, it can be stated without doubt Akki roti and avocado are a healthy choice to opt for.

Ingredients:

Avocado: 100gms

Truffle oil: 2ml

Kumquat: 1no

Labneh: 60gms

Beans mixture: 30gms

Pea shoot: 3no

Ghee: 50gms

Salt: to taste

Pepper: to taste

Rice Flour- 1 cup

Salt- 1/3 tsp

Fresh Grated Coconut- 3 tbsp

Cumin seeds- ½ tsp

Green chili fine chopped- 1 no’s

Curry leaves fine chopped- 1 sprig

Coriander leaves fine chopped- 2 tbsp

Onion fine chopped- 3 tbsp

Grated carrot- ¼ cup

Procedure:

How to make Akki roti:

Mix up all the ingredients in a bowl. Pour Water little by little to bind the flour. Keep adding water as you need as the amount of water depends on the moisture levels in your vegetables. Make as moist dough. The Akki Roti has to be sticky and moist as it helps to spread the dough easily. Divide the dough into 4 equal parts. Grease a cool pan and place it on the kitchen counter. Place a dough ball on the tawa, begin to flatten it evenly by spreading the dough from the center all over. Brushing the roti occasionally will help in retaining the moisture. Once the Roti is flattened, keep the tawa on the stove and cook it. Brush Oil and Ready to serve when Golden in color both sides.

Assembly of the dish:

Cut the Akki Roti into open Tacos Shapes.

Slice the avocado and season with salt and pepper

Arrange the Ghee masala beans mixture on the Akki Roti

Top off with the sliced kumquat

Serve the truffle labneh on the side.
